Reuben Sliders

Need a way to use up your corned beef? Then you have to make these easy and delicious Reuben Sliders. A fun family recipe that everyone loves.

Ingredients

  • 1 package Hawaiian rolls
  • 2 lbs corned beef sliced
  • 12 slices provolone or Swiss cheese
  • 1 cup sauerkraut
  • 1/4 cup Thousand Island Dressing
  • 1/4 cup butter melted
  • 2 Tbs whole grain mustard

Instructions

  • Preheat the oven to 350° F and spray a small casserole dish or 9"x13" pan with nonstick cooking spray.
  • Place the bottom half of the rolls in the pan then spread the Thousand Island Dressing over the rolls.
  • Place the corned beef over the dressing.
  • Place the cheese (double layered) over the meat.
  • Next add the sauerkraut to the top.
  • Place the top of the rolls over the sauerkraut.
  • Brush the tops of the rolls with the melted butter then spread the whole grain mustard over the top of the rolls.
  • Cover with tinfoil and place in the oven. Bake for 20 minutes. Remove the tinfoil and return to the oven for an additional 5 minutes.
  • Remove from the oven, slice and serve.

Notes

  1. You can use Swiss or provolone cheese in this recipe, some people aren't as keen on Swiss cheese so they use provolone, we have used both.
  2. You can use Hawaiian rolls or just regular sliders buns.
  3. We use bottled Thousand Island Dressing for this recipe, but you can make your own homemade if you like!
  4. If you want Reuben Sliders but don't have any leftover corned beef you can use deli corned beef for this recipe as well.
  5. Use all the sauerkraut you'd like on these, what we use is just a general measurement, my boys love more.
  6. Make sure that the cheese is melted, ovens run at different temperatures so make sure its all melted before removing.
  7. These can be frozen, see my tips above.
