  • 1/3 cup granulated sugar
  • 1 Tbs water
  • 1 1/2 cups cooked white rice
  • 1 cup whole milk
  • 1 large egg
  • 1/2 cup half and half
  • 1/4 teaspoon ground cinnamon
  • 1 Tbs unsalted butter
  • 1/2 teaspoon vanilla extract

  • In a small saucepan, add the peaches, sugar, and water. Stir to combine. Let come to a simmer over medium-low heat, simmer for 5-10 minutes until peaches are softened stirring occasionally.
  • Add the cooked rice and milk to the pan, stir to combine. Bring back up to a simmer and simmer for 10 minutes until slightly thickened, stirring occasionally.
  • While the pudding is thickening, in a small bowl add the egg and lightly beat. Mix in the half and half and ground cinnamon until fully combined. Slowly stream in the half and half mixture into the pan while stirring constantly. Continue to simmer, stirring occasionally until thickened, about another 5-8 minutes.
  • Take off the heat and stir in the butter and vanilla. Let cool slightly and serve.

Notes

  1. You can use leftover rice for this recipe, if you have some that amounts to the needed amount in this recipe it will work perfectly.
  2. If you prefer to peel your peaches you can also do that as well, usually the skin will break down while cooking so you won't have any issues with that.
  3. If you want a little extra cinnamon flavor, add a cinnamon stick in during the cooking process to infuse it more, or sprinkle some more cinnamon on top.
  4. This recipe will last in the refrigerator for about 4 days, read the storing instructions above.
  5. If you want this to be a little thicker, just let it cool more it will thicken as it cools, if you prefer a creamier version just eat right away.
  6. Serve with sliced peaches on top to get that extra fruit flavor.
