Strawberry Banana Granola Bars

A chewy banana flavored granola bar is studded with chopped diced dried strawberries and dipped in white chocolate.

Ingredients

  • 2 1/2 cup Bob's Red Mill Quick Cooking Rolled Oats
  • 1/3 cup honey
  • 1/4 cup butter diced
  • 1/4 cup brown sugar
  • 1/2 tsp vanilla
  • 2 over ripe bananas mashed
  • 1/2 cup diced dried and sweetened strawberries
  • 1 cup white chocolate chips or candy melts

Instructions

  • Line an 8"x8" (thinner bars) or bread loaf pan (thicker bars) with tin foil sprayed with non-stick cooking spray, set aside.
  • On sheet pan spread your oats and bake in oven for 10-15 minutes, mixing half way through.
  • Remove from oven and place in a medium sized bowl.
  • In medium saucepan add your honey, butter, brown sugar, vanilla and bananas.
  • Heat over medium heat until butter is melted and sugar is dissolved.
  • Pour over your oats and mix until combined, fold in your diced strawberries.
  • Press into prepared pan, cover and refrigerate for about 2 hours or until set.
  • Remove from refrigerator and cut into desired sized bars.
  • Meanwhile, in a square or flat bottomed container melt your white chocolate/candy melts according to package directions.
  • Dip the tops of your bars into the white chocolate and set aside to harden.
  • Serve and enjoy!
