Slow Cooker Asian BBQ Pork Sliders with Kimchi Slaw

Tender pork is slow cooked in an Asian inspired BBQ sauce and topped with a spicy kimchi slaw.

Ingredients

  • 2-3 lb boneless pork roast

Asian BBQ Sauce

  • 1 cup hoisin sauce
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 Tbs rice vinegar
  • 2 tsp garlic powder
  • 2 Tbs brown sugar
  • 2 Tbs water
  • 2 Tbs cornstarch
  • Deli sized slider buns

KIMCHI SLAW

  • 1 cup kimchi diced
  • 3 cups broccoli slaw prepackaged
  • 2/3 cup mayo
  • 2 Tbs honey
  • 1 Tbs rice vinegar
  • 2 tsp hoisin sauce

Instructions

  • In crockpot place your pork roast.
  • Mix together hoisin, soy sauce, honey, rice vinegar, garlic powder and brown sugar in bowl and pour over roast and cover and cook on low 5-6 hours (I cooked mine on high the first hour and then reduced temp to low).
  • Once roast in done, remove from crockpot to bowl and shred.
  • Pour your sauce into a saucepan and bring to a boil on stove.
  • Mix together your cornstarch and water and pour into sauce and stir until thickened.
  • Add your pork and BBQ sauce back to slow cooker and reduce heat to warm.
  • Meanwhile to make slaw, mix your kimchi and broccoli saw together in large bowl and toss to incorporate each.
  • In smaller bowl mix your mayo, honey, vinegar and hoisin sauce together and stir into your slaw mixture to coat.
  • When ready to serve add your pork to slider buns and top with slaw.
