- 8 carrots peeled with ends trimmed off and halved
- 3 Tbs olive oil
- 1/4 cup honey
- Salt and pepper
- Parsley optional
Preheat oven to 350.
Add your carrots to a bowl and drizzle with olive oil and toss to coat.
Next drizzle with honey and toss to coat again.
Spread on a baking dish, sprinkle with salt and pepper and bake for 30-40 minutes until fork tender, stirring every 10 minutes.
Remove from oven and place on serving dish and sprinkle with parsley if desired.
