- 2 lb boneless skinless chicken breast cut into 1-2" pieces
Sauce:
- 1 clove minced garlic
- 1/4 tsp ginger fresh or ground
- 1 tsp red pepper flakes
- 1/4 cup apple juice
- 1/2 cup brown sugar
- 2 Tbs ketchup
- 1 Tbs cider vinegar
- 1/2 cup water
- 1/3 cup soy sauce
- 2 Tbs cornstarch
- 2 Tbs cold water
In instant pot add your chicken followed by garlic, ginger, red pepper flakes, apple juice, brown sugar, ketchup, vinegar, water and soy sauce.
Stir to combine.
Place lid on instant pot and seal.
Place on manual setting for 5 minutes.
Once done do a quick pressure release.
Remove chicken from instant pot.
Turn your instant pot to saute mode.
In small bowl whisk together your cornstarch and cold water and whisk into sauce in bottom of instant pot until thickened.
Stir chicken back in to coat.
Serve over rice or noodles.
