Ingredients

  • 3 lb potatoes diced into 1" cubes
  • 1/3 cup olive oil
  • 1 Tbs dried thyme
  • 1 Tbs dried rosemary
  • 1 Tbs dried parsley
  • 2-3 cloves garlic minced
  • 1/2-1 Tbs sea salt
  • !/4 cup shredded parmesan optional

Instructions

  • Preheat oven to 400.
  • In large bowl add your potatoes and olive oil and toss to cover.
  • Add in thyme, rosemary, parsley, garlic and sea salt.
  • Mix together until evenly coated and spread on a large baking sheet.
  • Bake for 1 hour turning halfway through.
  • Place in serving dish and sprinkle with more salt and parmesan if desired.
