Taco Tater Tot Casserole

Ingredients

  • 1 lb. ground beef
  • 5 cups frozen tater tots
  • 1 cup onion chopped
  • 1 green bell pepper chopped
  • 1 1 oz. packet of taco seasoning
  • 1 cup red enchilada sauce
  • 1 10 oz can of tomatoes and chilies
  • 1 15 oz can of black beans, drained and rinsed
  • 1 12 oz bag frozen corn
  • 3 cups Mexican blend shredded cheese
  • optional sour cream and cilantro for garnish

Instructions

  • Preheat oven to 375 degrees and spray a 9x13 casserole dish with non-stick spray
  • In a large skillet over medium heat cook onions and bell pepper until tender.
  • Then add the brown beef unit cooked and no longer pink then drain fat and return to skillet.
  • Combine taco seasoning, tomatoes and chilies, enchilada sauce, black beans and frozen corn to skillet and cook for 10 minutes.
  • Stir in two cups of cheese and stir until melted
  • Transfer beef mixture into the casserole dish. Line tater tots across the top and bake for 30-35 minutes.
  • Remove from oven and sprinkle the remaining cup of cheese over the top. Bake another 5 minutes or until cheese is melted and bubbly. Garnish with cilantro and sour cream if desired.
