Smothered Potatoes

These crispy Smothered Potatoes are so simple to make and are exploding with flavor. With just a few ingredients, you'll be enjoying these in no time.

Ingredients

  • 1 ½ pounds yukon gold potatoes
  • 1 small sweet onion thinly sliced
  • 3 cloves garlic thinly sliced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • 2 tablespoons vegetable oil
  • ½ cup unsalted chicken stock
  • 4 tablespoons unsalted butter
  • Fresh chopped parsley for garnish optional

Instructions

  • Peel the potatoes and slice them into ⅛ of inch rounds. Place them into a large bowl with the onion, garlic, flour, salt, and pepper. Stir to combine.
  • Place a large heavy bottom skillet (I like to use cast iron) over medium heat. Once hot add the oil. Add the potato mixture directly to the pan and spread it out into an even layer.
  • Flip the potatoes around every few minutes, making sure to scrape the bottom of the pan to release any browned bits. Keep doing this until your desired browning is achieved, about 15 minutes.
  • Pour in the chicken stock and dot the top with the butter, add the lid.
  • Cook until fork tender, 8-10 more minutes.
  • Take off the lid and continue to cook, stirring occasionally until most of the liquid is absorbed about 5 more minutes.
  • Garnish with parsley if using and serve immediately.

Notes

  1. I like to use a cast iron skillet to make these in, but any heavy skillet will work. 
  2. You can easily double this recipe to feed more or have more leftovers. 
  3. Feel free to add any of the toppings I shared above.

  5. If you love dipping sauces, this is perfect for that. Try dipping these in gravy, ranch, honey mustard, ketchup, and more.
