Ingredients

  • 1 ½ pounds ground pork
  • 4 cloves garlic minced
  • 2 tablespoons light brown sugar packed
  • 1 ½ tablespoons finely chopped fresh sage
  • 1 ½ tablespoons finely chopped fresh thyme
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon black pepper
  • ½ teaspoon crushed red pepper flakes
  • ½ teaspoon poultry seasoning
  • ½ teaspoon smoked paprika

Instructions

  • Place the ground pork, garlic, brown sugar, sage, thyme, salt, pepper, pepper flakes, poultry seasoning, and paprika in a large bowl.
  • Mix until combined. Cover with plastic wrap and place in the refrigerator for at least one hour. Overnight is best if you have the time.
  • Portion the sausage into 12 equal pieces and form into patties.
  • Place a large skillet over medium heat. Brown the sausage on each side for about 4-5 minutes until an internal temperature reaches 165°F. Serve immediately.

Notes

  1. Make a double batch of sausage and freeze the extra for later. 
  2. Instead of making Breakfast Sausage patties, crumble it and make biscuits and gravy. 
  3. You can shorten the marinating time if needed, but letting it marinate for the full hour really adds so much flavor. 
  4. You don't have to use any oil or nonstick spray in the pan, the ground pork has enough fat in it that it won't stick to the pan. 
  5. The chili flakes add a little heat to the sausage mixture, if you want more heat, add more chili flakes. If you like smokey heat, try chipotle powder or cayenne. 
  6. Sometimes it's hard finding fresh herbs, in that case you can use dried herbs. I recommend using 1 1/4 teaspoons of dried instead of the 1 and a half Tablespoons of fresh herbs.
  7. You can freeze this sausage for later.
