Ingredients

  • 3 cups all-purpose flour
  • teaspoons pumpkin pie spice
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • ½ teaspoon baking powder
  • ½ cup granulated sugar
  • 1 cup light brown sugar packed
  • cup vegetable oil
  • 3 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 1 cup 100% pumpkin
  • cups mashed overripe banana about 2 medium bananas

Instructions

  • Preheat the oven to 350°F and spray two 8.5×4.5-inch loaf pans with nonstick spray and set aside.
  • In a large bowl, whisk together the flour, pumpkin pie spice, baking soda, cinnamon, salt, and baking powder. Set aside
  • In a large measuring cup or medium bowl, beat together the sugars, oil, eggs, and vanilla. Then beat in the pumpkin and mashed banana.
  • Add the wet ingredients to the dry ingredients and beat until combined.
  • Divide the batter between the two greased loaf pans and bake for 45 to 60 minutes or until a cake tester comes clean from the center of the loaves.

Notes

  1. This recipe is easy to scale and make more loaves, making it and ideal recipe to use for a bake sale or party. 
  2. If you need to ripen a few bananas fast, toss them in the refrigerator. 
  3. Feel free to add a glaze or any extra add-ins to the bread, I shared some suggestions above.
  4. You can freeze any extra loaves for later, see my tips above. 
  5. This quick Pumpkin Banana Bread recipe is great for making smaller loaves or even muffins with. 
  6. Make sure to use a sharp serrated knife to cut your bread for nice clean cuts.
