Ingredients

  • 1 ½ cups biscuit baking mix I used Bisquick
  • 1 cup granulated sugar
  • ½ cup cocoa powder
  • ¾ cup water
  • 2 eggs slightly beaten
  • 2 tablespoons vegetable oil
  • ½ teaspoon vanilla extract
  • ½ cup chocolate chips
  • Assorted toppings of choice powdered sugar, strawberries, raspberries, bananas, whipped cream, ice cream, additional chocolate chips, chocolate syrup, etc.

Instructions

  • Heat your waffle iron.
  • Sift the biscuit mix to get rid of any lumps into a large bowl and then stir in the sugar and cocoa powder.
  • Next, add in water, eggs, oil, and vanilla to the bowl and mix well. Then mix in the chocolate chips until it's well combined.
  • Spray the hot waffle maker with cooking spray. Pour batter into the waffle iron until the bottom plate is just barely covered completely (usually uses about ¾ cup).
  • Cook the waffle in the iron for about 2 minutes or until it's nice and firm.
  • Carefully remove the waffle and serve with toppings if desired. Repeat with the remaining batter to make all the waffles.

Notes

  1. I used Bisquick baking mix, but you can use whatever brand you have.
  2. Don't forget to spray the waffle iron in between waffles so they don't stick.
  3. While adding the chocolate chips is an optional step, it really brings a fantastic chocolate flavor.
  4. While my waffles cooked in 2 minutes, yours may require more or less time, so use your first one as a trial and error to see how fast or slow your waffle iron works.
  5. You can freeze these, see above on how to do that.
  6. You can double or triple the recipe to make more waffles.
  7. Feel free to add a bunch of different toppings, don't be afraid to experiment, some of my ideas are listed above!
