Strawberry Mojito

This easy Strawberry Mojito cocktail recipe is crisp, refreshing, fruity with the perfect amount of bubbly to make your tastebuds zing. Terrific summertime sipping drink.

Ingredients

For Simple Syrup:

  • 1 cup of water
  • 1 cup of sugar
  • 1 cup strawberries chopped

For the Mojito:

  • Mint leaves
  • 1 large strawberry
  • 1 ounce strawberry simple syrup
  • 2 ounces light rum
  • 1 ounce lime juice
  • Sparkling water

Garnish:

  • Mint leaves
  • Lime wedges
  • Strawberries

Instructions

  • Start by making the homemade simple syrup. First, combine the water, strawberries, and sugar in a small saucepan and bring it to a low simmer. Stir it until all the sugar has dissolved.
  • Remove the syrup from the heat and set it aside and allow it to cool completely before straining into a bowl or jar.
  • Next, muddle the strawberry and mint leaves in a tall glass and add ice.
  • Then add lime juice, strawberry simple syrup, and rum to the glass with ice.
  • Add in your sparkling water.
  • Stir to combine everything.
  • Garnish with extra mint leaves and a few slices of limes and strawberries if desired.
  • Serve and enjoy!

Notes

  1. You can use store bought simple syrup if desired.
  2. You can make larger batches of these delicious mojitos, check out my tips above.
  3. No muddler? No problem! There are various other tools you can use, try a spoon, bottom of a wooden spoon, mortar and pestle, or a wooden skewer.
  4. You can make this a kid-friendly drink, or just a non-alcoholic drink for those who choose not to drink, by simply leaving out the alcohol, that's what I do when I want to enjoy one of these since I don't drink.
  5. Wait to add the sparkling water until you're ready to drink it!
  6. You can make the simple syrup ahead of time and store in the fridge until you are ready to use it.  But, I wouldn’t recommend making anything else ahead of time.
