Smoked Steak

Juicy, smoky, and melt in your mouth tender, this Smoked Steak is the perfect Summertime NY Strip Steak recipe, that includes a DIY Dry rub and butter!

Ingredients

  • 2 NY strip steaks 1-1 ½ pounds each, ¾-1 inch thick

DRY RUB:

  • 1 teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon oregano
  • ½ teaspoon pepper
  • ¼ teaspoon paprika

LEMON DILL BUTTER:

  • 6 Tablespoons salted butter softened
  • 1 teaspoon finely chopped fresh dill
  • 1 teaspoon lemon juice freshly squeezed

Instructions

  • First, preheat your smoker grill, with the vent closed, to 200F. This usually takes about 10 minutes depending on your smoker.
  • Mix the dry rub spices together in a small mixing bowl, and press the rub evenly into the steaks, while the grill preheats.
  • When the smoker is ready, place the steaks directly on the grill grate and close the lid to let them smoke for 20 minutes.
  • While the steaks are smoking, mix the softened butter, fresh dill, and lemon juice together. Cover the butter and place it in the fridge.
  • Open the smoker lid and the vent, and increase the temperature to 450F. Move the steaks to the top rack or onto a cooler place on the grill and allow the fire to establish, which takes about 3 minutes depending on your smoker.
  • Now, place the steaks directly over the flame and add 1 Tablespoon of butter on top. Sear the steak for 1 minute on each side, or until the desired doneness is reached. Check out the FAQ section for more info on internal temperatures.
  • Remove the steaks and tent with foil to keep warm or serve immediately.

Notes

  1. Always taste your steaks before salting them, especially since you're using salted butter in this recipe. 
  2. Use a meat thermometer when smoking your steaks so you ensure that you get your steak cooked to your desired level without overcooking it. 
  3. Always remember that smoked steaks will look slightly different than grilled steaks traditionally look. But, the internal temperature should remain the same between the two cooking methods, so it's not always smart to smoke your steak and gauge the doneness just by looking at it.   4. Reheat your steak on the smoker for best results.
