Chocolate Chip Pumpkin Blondies

When it comes to bars these Chocolate Chip Pumpkin Blondies are the way to go! Pantry staple ingredients, incredible flavor and super easy.

Ingredients

  • 2 ½ cups all-purpose flour
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups dark brown sugar packed
  • 1 cup unsalted butter softened
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  • Preheat the oven to 350°F. Line a 9x13 with foil or parchment paper and spray with cooking spray, set aside. In a medium-sized bowl whisk together the flour, pumpkin pie spice, baking soda, and salt, set aside.
  • In the body of a stand mixer with the paddle attachment cream together the dark brown sugar, butter, and granulated sugar until smooth, 2 minutes.
  • Add the egg and beat until combined.
  • Add the pumpkin and vanilla, beat until smooth.
  • Next, add the dry ingredients to the wet and mix until combined with no dry patches.
  • Add in the chocolate chips.
  • Fold into blondie batter..
  • Press the dough into the prepared baking dish. I find it easier to spread with slightly moistened hands.
  • Bake for 40-45 minutes until a toothpick inserted into the center comes out clean.
  • Let cool completely, cut, and serve.

Notes

  1. If you wan't a lighter flavor or simply do not have dark brown sugar, you can use light brown, they taste just as good!
  2. You an use any of your favorite chocolate chips, semi-sweet, milk, dark and even white.
  3. If you don't like pumpkin and chocolate together see my tips above on what else you can add in!
  4. These can be frozen, see my tips above on how to do that.
  5. Make sure you are using pumpkin puree and not pumpkin pie filling.
  6. You can adjust your pumpkin flavor by adding more or less pumpkin pie spice.
  7. This recipe can be halved to serve less people.
