Pineapple Mojitos

A sweet and deliciously refreshing summer drink these Pineapple Mojitos are full of pineapple juice, lime, rum, mint and club soda. Making it a super flavorful and refreshing drink.

Ingredients

  • 3/4 cup of pineapple juice
  • 15-20 large mint leaves
  • 3 limes 2 limes cut into wedges and 1 lime juiced
  • 3 oz of white rum
  • Club soda
  • Crushed ice

Instructions

  • Muddle the mint leaves in the glasses. Make sure to have strong bottom glasses or muddle in a cocktail shaker.
  • Cut 2 limes into wedges, add into each glass, and muddle. Squeeze the remaining lime to extract the juice, add it to the glasses.
  • Add the pineapple juice.
  • Fill half of the glasses with crushed ice.
  • Pour in the rum (1.5 fl oz in each glass) and fill with club soda. Stir. You can adjust the taste with cane sugar if desired. It depends on the sweetness of your pineapple juice.
  • Garnish the glasses with a pineapple wedge and mint sprigs. Enjoy.

Notes

  1. For a mocktail version, don’t add the rum.
  2. To pick the right pineapple, smell its base. If it smells sweet, that’s a good one. If not, the pineapple is probably not sweet enough.
  3. f you want to make it ahead, please note that freshly squeezed pineapple juice has to be consumed in 24 hours.
  4. And to keep the bubbles from the club soda, add it right before serving.
  5. Try with 7Up instead of classic club soda for an even more refreshing taste
