Peanut Butter & Chocolate Baked Oats

With easy and minimal ingredients you can have these Peanut Butter & Chocolate Baked Oats on your table in on time. With a cake like texture these are absolutely irresistible.

Ingredients

  • 1/2 cup old fashioned oats
  • 1/2 cup oat milk
  • 2 Tbs peanut butter divided
  • 1 Tbs applesauce
  • 1 Tbs agave or honey
  • 1 tsp baking powder
  • 1/2 tsp vanilla
  • 1/2 tsp salt
  • 1 scoop protein powder optional
  • 1 Tbs mini chocolate chips + more for topping (optional)
  • 1 chocolate square for topping

Instructions

  • Preheat the oven to 400 degrees F and grease a small baking dish or a larger ramekin (11oz.+) and set aside.
  • Add the oats, milk, 1 tablespoon peanut butter, applesauce, agave, baking powder, vanilla, and salt as well as protein powder, if using, and blend until smooth.
  • Pour the blended oats into the prepared baking dish and stir in chocolate chips.
  • Bake for 20 to 22 minutes or a toothpick inserted into the center comes out clean.
  • Remove from the oven and top with the remaining tablespoon of peanut butter, the piece of chocolate, and additional chocolate chips if desired.
  • Enjoy warm.

Notes

  1. The dish should be at least 11 oz and be at least 4 inches wide to allow for proper baking.
  2. The oats will puff up and will settle back down after coming out of the oven.
  3. I do recommend placing the baking dish on a small baking sheet since the smaller dishes can be harder to handle with oven mitts.
  4. Alternatively, you can just mix everything together instead of blending for a heartier version.
  5. I used crunchy peanut butter, but creamy can also be used. 
  6. Almond, cashew, soy, or regular milk can also be used in this recipe.
  7. You do not have to use the protein powder, that is completely optional.
