Ingredients

  • 2 cups milk
  • 1/2 cup + 3 Tbs sugar
  • 3 Tbs cornstarch
  • 3 Tbs cocoa powder
  • 1/4 tsp salt
  • 1 egg
  • 1 egg yolks
  • 2 Tbs butter
  • 2 tsp vanilla extract
  • Whipped topping optional
  • Chocolate shavings optional

Instructions

  • n medium saucepan add in the milk, sugar, cornstarch, cocoa powder, salt, egg and egg yolk.
  • Continuously whisk over medium high heat until thick and bubbly, this could take about 10-15 minutes.
  • Remove from heat and whisk in the butter, and vanilla extract until butter is melted and combined.
  • Place Saran Wrap over the top of pudding pressing down on top of pudding so it doesn’t create a film and place in refrigerator until chilled.
  • Dollop with whipped topping and chocolate shavings if desired.

Notes

  1. Why don’t we temper our egg mixture? There is no rhyme or reason behind this, we aren’t adding in eggs to a hot liquid, we are cooking them all together at the same temperature keeping them from cooking and just used as a thickener.
  2. If you are a dark chocolate fan, you can add dark cocoa powder rather than regular unsweetened.
  3. Placing Saran Wrap over your pudding helps prevent a film from forming over the top of your pudding mixture.
  4. This may take up to 10-15 minutes to fully thicken up, do not give up!
  5. This can be frozen, see the notes above for instructions on that.
