Mojo Baked Pork Tenderloin

Juicy, flavorful and absolutely easy this Mojo Baked Pork Tenderloin is a delicious weeknight dinner with minimal ingredients that everyone will love.

Ingredients

  • 1 2.5 lb pork tenderloins

Mariande:

  • 1/4 cup olive oil
  • 1/3 cup orange juice
  • 1/4 cup lime juice
  • 1/2 cup cilantro chopped
  • 4 clove garlic minced
  • 1 tsp oregano
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • In bowl add your marinade ingredients and whisk together until combined.
  • Place your pork tenderloins into a gallon ziptop bag and pour marinade over the top and seal the bag.
  • Let marinate in refrigerator 4-6 hours.
  • Preheat oven to 350 degrees F.
  • Add your tenderloins and marinade into an oven safe skillet, we used cast iron.
  • Place in oven and bake for about 45 minutes or until internal temperature reaches 145 degrees F. Baste with marinade every 10 minutes or so.
  • Remove from oven and let rest about 5 minutes before cutting.

Notes

  1. This can be cooked in the marinade, which we do, but it is not necessary if you do not want to.
  2. You can pre-sear this before baking it in the oven to give it a golden coating on the outside.
  3. Make sure to at least cook to 145 degrees F internal temperature before removing.
  4. Let rest at least 5 minutes before slicing.
