Mojo Baked Pork Tenderloin

- 1 2.5 lb pork tenderloins
Mariande:
- 1/4 cup olive oil
- 1/3 cup orange juice
- 1/4 cup lime juice
- 1/2 cup cilantro chopped
- 4 clove garlic minced
- 1 tsp oregano
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
In bowl add your marinade ingredients and whisk together until combined.
Place your pork tenderloins into a gallon ziptop bag and pour marinade over the top and seal the bag.
Let marinate in refrigerator 4-6 hours.
Preheat oven to 350 degrees F.
Add your tenderloins and marinade into an oven safe skillet, we used cast iron.
Place in oven and bake for about 45 minutes or until internal temperature reaches 145 degrees F. Baste with marinade every 10 minutes or so.
Remove from oven and let rest about 5 minutes before cutting.
- This can be cooked in the marinade, which we do, but it is not necessary if you do not want to.
- You can pre-sear this before baking it in the oven to give it a golden coating on the outside.
- Make sure to at least cook to 145 degrees F internal temperature before removing.
- Let rest at least 5 minutes before slicing.
