Mashed Potato Casserole

- 3 1/2 pounds russet potatoes peeled and cubed
- 1/4 cup cream cheese
- 1/4 cup butter
- 3/4 cup Milk
- 2 Tbs ranch dressing mix
- 2 cups shredded cheddar cheese divided
- 1 cup cooked bacon diced and divided
- 1/4 cup sliced green onions
Add potatoes to a large pot, cover with water and bring to a boil. Boil until tender and then
drain and return to pot.
Add the cream cheese, butter, milk and ranch dressing mix to the potatoes and, with a potato masher and hand mixer, mash until almost smooth, it's ok to have a few lumps.
Add 1 1/2 cups of cheese and most of the bacon (reserve about 2 Tbs for garnish).
Stir the cheese and bacon into the potatoes until combined.
Spread the potatoes into a 2 quart baking dish, then top with reserved cheese and bacon.
Place in the oven and bake at 350 degrees for 30 minutes, then turn the oven to broil and broil
about 2-3 minutes until cheese is bubbly and potatoes are slightly browned.
Remove from the oven and garnish with green onion before serving.
- It's ok if your potatoes are a little bit lumpy, we really like it that way, you can use a potato masher or a hand mixer, depending on how smooth you like your potatoes.
- We like to use Russet potatoes for making these, in a pinch you can use instant mashed potatoes if necessary.
