Streusel Topped Baked Oatmeal

Quick and easy to whip together this Streusel Topped Baked Oatmeal is the perfect breakfast or brunch recipe with a sweet and crunchy topping!

Ingredients

  • 1 1/2 cups milk
  • 2 eggs
  • 1/2 cup brown sugar
  • 1/4 cup butter melted
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 tsp vanilla
  • 3 cups old fashioned oats

TOPPING:

  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup butter cubed

Instructions

  • Preheat oven to 350. Spray an 8"x8" baking dish with non-stick cooking spray, set aside.
  • In bowl add your milk, eggs, brown sugar, butter, baking powder, cinnamon, salt and vanilla and whisk together until combined well.
  • Add in your oats and stir until combined, pour into prepared baking dish, set aside.
  • To make topping, in bowl add flour, brown sugar and butter and using fork or fingers mix together until you get pea sized crumbles.
  • Sprinle over the top of oatmeal evenly and bake in oven about 40-45 minutes until browned.
  • Serve with maple syrup or milk.

Notes

  1. Quick oats CAN be substituted but the texture will turn out different.
  2. Serve with milk or drizzled with maple syrup.
  3. This recipe can easily be doubled.
  4. You can stir in some of your favorite mix ins such as chopped nuts or chocolate chips, etc.
  5. You do not have to make the streusel topping if you do not want to, just bake as directed.
