With meats, vegetables, beans and more – this Cowboy Stew is hearty, filling and an absolute family favorite.
It is getting to be a little cooler these days and when that happens I bust out all my soups and stew recipes!
This Cowboy Stew is a classic and one that we make a lot in our household. With so many flavors and depth, it is just so good.
The part that I love is that you use two different meats, ground beef and sausage. Now some use smoked sausage, we use andouille for that extra kick.
Then add in the spices and you have yourself a dinnertime meal that will have your house smelling good and keep your bellies full.
This recipe is great for both kids and adults alike, at least my kids like it – which some can be really picky but they devour this Cowboy Stew.
If you’ve been looking for something hearty, warm and filling, then you absolutely need to whip up a batch of this.

WHY THIS RECIPE WORKS:
- With all the ingredients combined it makes a hearty and absolutely flavorful dish.
- You can adjust the flavor to your liking by switching around some spices.
- This feeds a crowd as one bowl will fill you up.
INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Ground beef
Smoked sausage (I used Hillshire Farm Cajun-Style Andouille)
Yellow onion
Garlic
Diced tomatoes and green chilies
Pinto beans
Yellow sweet corn
Tomato sauce
Potatoes
Frozen mixed veggies
Beef broth
Chili powder
Cumin
Salt
Black pepper
Fresh parsley, for garnish
Cayenne pepper, optional
HOW TO MAKE COWBOY STEW, STEP BY STEP:
- Add ground beef to a large stockpot or Dutch oven and cook over medium heat until browned, about 8-9 minutes. Drain grease.
- Add sliced sausage and cook over medium heat until beginning to brown on each side, flipping halfway through.
- Add onion and garlic then continue to cook over medium heat until translucent, about 4 minutes.
- Add diced tomatoes and chilies, beans, corn, tomato sauce, potatoes, mixed veggies, broth, and seasonings to pot, then give a good stir.
- Bring to a boil, then reduce heat and simmer for 30-32 minutes or until potatoes are cooked through.
- Spoon into bowls, top with fresh parsley, and serve.
WHAT ARE THE BEST POTATOES TO USE?
You can use pretty much any potato that you want in this recipe. We used Russet.
But you can also use Yukon Gold or even Red Potatoes, use what you have on hand and it will all work!
IS THIS SPICY?
This really isn’t any more spicy than a chili, you can reduce the amount of chili powder and cumin if you’d like.
You also have the option to make is spicier by adding in 1-2 teaspoons of cayenne pepper.
So it can go either ways depending on your spice preference.
WHAT IS THE BEST SAUSAGE TO USE?
Use your favorite sausage, smoked sausage, kielbasa, andouille, etc. Use what you like best.
We have tried it with all types of sausages and we have loved them all so it really is just a personal preference.
DOES THIS MAKE A LARGE SERVING?
This is meant to make 8 servings, but depending on how much you eat it could be less than that.
This is really hearty and really filling, at least to us. So judge when you make it to see if it will be enough, if not you can always make a double batch.
HOW TO STORE:
This can be stored in an airtight container in the refrigerator where it will keep for up to 4 days.
You can freeze this however freezing soups/stews with potatoes changes the texture of them so know that beforehand.
To freeze, place in a freezer container and it will keep in the freezer for up to 1-2 months.
To defrost, remove from the freezer to the refrigerator until thawed. To reheat place in the microwave or place everything back in pan and slow bring to temperature.
TIPS AND TRICKS:
- Top this with your favorite chili toppings like cheese, sour cream etc.
- This is great served with cornbread, dinner rolls, french bread, tortilla chips, etc.
- You can use any of your favorite sausages for this recipe.
- Try to use at least 80/20 ground beef.
- You can make this spicer or less spicy, see above on how to do that.
- This is hearty but you can double this recipe if you’d like.
- This can be frozen, see above on how to do that.
- Use your favorite potato in here.
- For the frozen vegetables we use a mixture of green beans, carrots, corn and peas.

- 15- ounce can pinto beans drained and rinsed
- 15- ounce can yellow sweet corn drained
- 15- ounce can tomato sauce
- 2 medium potatoes peeled and cubed
- 12- ounce bag frozen mixed veggies
- 2 cups beef broth
- 1 teaspoon chili powder
- ยฝ teaspoon cumin
- ยฝ teaspoon salt
- ยฝ teaspoon ground black pepper
- Fresh parsley finely chopped for garnish
- 1-2 teaspoons cayenne pepper optional
