A fun appetizer to serve to guests this Cowboy Caviar is a classic party dish that never has any leftover!
Howdy howdy my friends! If you haven’t been to a picnic or family get together yet this year and haven’t had something similar to this post then you’re in luck. This is my absolute favorite potluck dish. So healthy but yet so so so good. Filled to the brim with veggies and beans, marinated and then served with chips. What gets better than that!…

Quick to whip up and full of almond flavor this Almond Poppyseed Zucchini Bread adds a little vegetables to make the bread sweet and tasty.
I have a case of the Monday’s. Ugh, I’ve had the last 9 days off and now getting back into the groove of things is hard. Granted I only do daycare so I get to stay home, but the sleeping in and being able to do what I wanted when I wanted was really nice. So today is going to take a little adjustment getting used to. …

Easy, cheesy and delicious this Pollo Fundido is a tasty Mexican dish that can be a meal, side or a snack!
My post is so late this morning. My 6-year-old asked me so sweetly to make him some pancakes and obviously I couldn’t say no. It then turned into a competition on how big mom could make a pancake and actually keep it together. Might I say that I did a pretty good job. Maybe I made an overwhelming amount of pancakes but at least they save pretty well. …

This Razorback Cake is a twist on a traditional Red Velvet cake with a cooked frosting and coated in coconut. An addicting cake for sure!
Good morning and happy Monday. Today is my 28th Birthday. When did I start getting so old? Ha no I know it’s not old, and I honestly don’t feel 28 at all, but lo and behold I am now that age. I don’t know what my lovely kids and husband have planned for me today, they are all still sleeping, besides my hyper little 2-year-old. She is sitting here playing with our cat who she constantly pushes to the limits and I’m waiting for the day that she learns her limits. I know it’s coming soon….

Layers of cookie dough, caramel, pretzels and chocolate make these Chocolate Caramel Pretzel Bars a huge hit! Tasty, easy and delicious.
Do you guys remember high school well? I’ve been reminiscing for the past few days about my high school years. That may be because I have my 10 year high school reunion this weekend. Oh my. Time has gone by so fast. In those last 10 year I’ve managed to get married, have 4 children and buy our first home. Might not sound like much but it feels like a lot. …

Creamy and cheesy this Mexican Sour Cream Rice is the perfect side dish to any of your Mexican feasts. Quick, easy and delicious!
Happy hump day friends! I hope your week is going nicely. I have a nice cranky almost 2-year-old today who didn’t sleep so my day is lovely. Oh the joys of motherhood I tell ya, one day at a time! This is my favorite age, but yet also my least favorite age. They are learning so much and showing us that but at the same time they are gaining their independence and with that comes tantrums. My daughters new word is “no.” She absolutely loves saying it, although it is absolutely adorable, she uses it to reply to anything my husband or I ask her. It gets quite frustrating at times because we don’t really know if she means it, or if she just chooses to say it. …

Fast, easy and delicious this easy Vegetable Lo Mein is a quick and easy dinner recipe that can be made in less than 30 minutes!
Hey guys! Yeah so this post is late. Usually I schedule my posts to be posted at 6 am, nope didn’t happen. I got home at 9 last night, took a shower and ate and went to bed. My 8-year-old had a baseball game, last one for the season last night. So drove a good 40 minutes there and back and with the heat the way it has been the last few days I didn’t get to posting. I’m sorry will you ever forgive me? At least its better late than never!…

Creamy and hearty, this Chicken Noodle Soup is a classic comfort dish that everyone loves. Super easy and delicious!
Are you all ready for the weekend? I’m saying yes please. I need to catch up on some lost sleep over this week. My daughter will be 2 in September and has hit her terrible 2’s a little ahead of schedule. So it’s been tantrums and no naps and just general naughtiness coming out of this little petite thing and has drained my energy completely. I don’t wish these meltdowns upon anyone. I do have to admit sometimes I sit back and chuckle. She gets so mad at me when she sees me laughing at her, which in turn makes me laugh harder. Ugh, I’m such a mean mommy. …
