Delicious and fresh flavors make this Caprese Tortellini Salad a perfect pairing to any dish!
Summertime is among us! Is anyone else yelling praises to the mountaintops? I know I am! I get the luxury to finally sleep in a little bit later each day and that is big for me. Sleep = my sanity and trust me you don’t want to mess with that!
Now that school is out and the kids are home I’ve got more mouths to feed during the day. We also have lot’s of summer activities that we partake in and need to run from here to there to anywhere throughout the day! It get’s a little hectic around here but whats life without a little craziness. But through all that craziness one thing that we are able to do is come together over the timeless pizza that is Red Baron!
Red Baron is perfect in my opinion, the crust isn’t too thick or too thin and has that crisp crunchy texture with every bite! I think they know what’s up since they have been around for 40 years now! It is great for our busy family and is a quick and easy weeknight favorite. We like to pair it with an equally quick Caprese Tortellini Salad which is a one bowl meal and highlights summer flavors!
While I was at my local Walmart picking up my Red Baron pizzas I went ahead and grabbed all the ingredients needed for my Caprese Tortellini Salad and the kids and I started planning our delicious quick meal for that night!
Normally Caprese Salad is tomato, mozzarella and basil, we wanted to switch it up a bit and give it a little summer flair and add in some of our favorite pizza toppings to make it pair well with our Red Baron pizza. So in addition to the tomato, mozzarella and basil we decided to make it a little more hearty and add some cheese tortellini, black olives and some roasted red peppers. Drizzle it with a little homemade balsamic dressing and you have yourself a delicious and QUICK meal.
Our summer is only beginning and we have mannnnnny busy nights ahead of us where this meal will come in handy! What are your favorite Red Baron pizzas?
- 1 (19 oz) pkg tortellini, prepared according to pkg directions
- 2/3 cup silced olives
- 3/4 cup mozzarella pearls
- 2/3 cup chopped roasted red pepper*
- 1/2 cup chopped fresh basil
- 3/4 cup quartered diced grape tomatoes
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1 clove garlic, minced
- 1 tsp honey
- Salt and pepper
- Rince your cooked under cold water until cook then transfer to large bowl.
- Stir in your olives, mozzarella, red peppers, basil and tomatoes until combined.
- In small bowl whisk together all your vinaigrette ingredients and pour over pasta and toss to coat.
- Serve chilled.
- I find my roasted red peppers in a jar packed in water at the grocery store.
