Are you guy’s ready for the New Year? Do you have any big dreams or aspirations for this coming year? My resolution for this year, which keep in mind I NEVER MAKE RESOLUTIONS, is to read more. I have bought all these books off of Amazon and eBay this past summer and I have proceeded to read 2.5 of them. Now that’s better than none, but I used to read all the time. So I aspire to put down my devices a little more often and go back to the old school way and put my face to paper.
Have you ever just wanted to play around in the kitchen? If you are a foodie like me then that is a yes. I was craving something of the Mexican variety. I had originally planned on making something along the lines of Greek but the tortellini that I was going to use apparently needed to be refrigerated and I had placed them in my pantry…whoops, kitchen fail. So I had to refigure my plan and out popped this Mexicali Bowtie Salad. I brought this to Christmas and it was eaten up. Even my 2-year-old daughter loved it. Now when she has a plate full of food and refuses to eat anything besides this salad, that’s saying something.
Sometimes I feel like I am being really healthy. Take in point this salad….corn, black beans, tomatoes, olives, avocado, all healthy foods. Then you add in pasta and dressing and cheese…and it takes away my amazingly healthy aspect of the dish. I will still qualify this as healthy because the number of veggies outweigh the number of fattening items. That’s ok right? Seriously though, this salad isn’t that bad and I love pasta too much to even care. So if you are giving up carbs as your resolution…I’m going to apologize ahead of time as this probably isn’t for you. But show your friend and maybe they will make it and you can watch them eat it and enjoy 🙂
The hardest part about this Mexicali Bowtie Salad is boiling the noodles. Now if I can say THAT is the hardest part then you have the perfect quick weeknight salad to go alongside any meal. Taco Tuesday anyone? It has such a fresh aspect but yet a little kick from the chipotle ranch. A tasty balance of creamy and heat make this salad a nice change from the normal pasta salad.
- 1 (16 oz) pkg bowtie pasta
- 1 cup corn
- 1 cup black beans, drained and rinsed
- 1 ripe avocado, pitted and diced
- 1 (4 oz) can sliced olives
- Handful of grape or cherry tomatoes, diced
- 3/4 cup feta cheese
- 1 cup chipotle ranch dressing*
- Cook pasta according to package directions.
- Once done rinse under cold water and dump in large bowl.
- Stir in all your veggies.
- Add your salad dressing and toss to coat.
- Sprinkle with cheese.
- Refrigerate until chilled.
- *Noodles will soak up the dressing once it sits awhile, add more dressing to desired consistency.
