This Chocolate French Silk Pie has always, always been one of my husbands most beloved pies ever. He always requests it and devours it! It’s the one actual chocolate dessert other than ice cream that he will eat. He has an aversion to cakes and bars (how did this man and I ever connect!!), but this one is the one dessert that I can always count on him to eat!

I also adore this pie. Now one thing you may not know about me, I don’t own a stand mixer, say WHAT?!?! I know it’s weird, a baker that write a blog and has all these desserts and doesn’t own a stand mixer? Yeah we have a really small kitchen and all my other baking supplies overwhelms my cabinets and pantry so I never have gotten around to purchasing one. But hey Kitchen Aid…if you read this, hook a girl up! Ha, JK!!

But all my desserts, breads and such have always been made with a hand mixer or mixed with love from a whisk. So friends, I do assure you that it is not necessary to own a stand mixer to create beautiful desserts. Unless on the other hand you are making marshmallows…because a hand mixer apparently burns out and starts smoking if you try to make homemade marshmallows with one, who knew.

Anyways, back to this Chocolate French Silk Pie. It really lives up to it’s name. It is silk, chocolatey and to die for. Now having a stand mixer does come in handy for this recipe, simply for the fact that you have to beat your eggs for a full 5 minutes after each addition to ensure that you get that silky texture. So here I am dying with my hand mixer, arms going into cramp mode from holding that thing for a full 20 minutes.

But it’s ok. I just turned up my echo and listened to a podcast that I was binging at the time and it made the process go a lot quicker. But yes, the mixing of those eggs are really what makes this pie silk. And trust me, if you do only own a hand mixer, it is worth the time and effort put behind it. 

Pour it all into a pre-baked pie crust and let it set for a few hours then top with whipped cream and chocolate shavings and you have yourself the most perfect dessert for any time of year. We particularly like to make this for the holidays like Christmas and this year we made it for Thanksgiving along with pumpkin pie (duh) and Southern Banana Pudding. We had an array of desserts this year, which is not unlike my style. I like to dabble in a little bit of everything.

Ingredients
  • 1 9 " pie crust
  • 2 sticks unsalted butter softened
  • 1 1/2 cups sugar
  • 4 ounces unsweetened chocolate melted and cooled slightly
  • 2 tsp vanilla
  • 2 tbs cocoa powder
  • 4 eggs
  • Whipped cream for topping
  • Chocolate shavings
Instructions
  1. Preheat oven to 400.
  2. Place pie crust in deep dish pie pan and bake for about 10-15 minutes until slightly golden, set aside to cool.
  3. Meanwhile in the bowl of a stand mixer fitted with a paddle attachment or hand mixer beat together the butter and sugar until light and fluffy.
  4. Add in your melted chocolate and continue to mix until combined.
  5. Add in your vanilla and cocoa powder.
  6. Add eggs one at a time, beating for 5 full minutes in between each addition.
  7. Pour the filling into the cooled crust and allow to set in the refrigerator for at least 4 hours.
  8. Top with whipped cream and chocolate shavings.
