So we had a birthday earlier this week! My daughter turned 4! I can’t believe my youngest is now 4! We have a larger age gap between her and my boys who are 9, almost 11 and almost 13. Plus she is the only girl so when her birthday rolls around I have a lot of fun creating all the colorful girly things and this one was just that!

So like it seems like any girl these days, she is addicted to Shopkins. Her birthday was full of Shopkins gifts and references and she absolutely had the time of her life! I mean seriously, she loved it which I was kinda aiming for. And you won’t believe how EASY this cake is to recreate, seriously!

So I may be like dense but I don’t really understand all this Shopkins stuff. Like my daughter totally gets it but I don’t. So I kinda just recreated this based on the color theme and I think it turned out well! We had it topped complete with Shopkins sprinkles. Those were what sealed the deal weirdly. My daughter was literally obsessed with those sprinkles (found at Walmart)!! Why, I do not know but she insisted on eating ALL OF THEM! I think it was because they had the Shopkins emblem on them!

Girls…I will never understand them. I was a boy mom for so long that I’m still trying to figure out this little girl thing myself, I’m sure one day I’ll get there, but it is going to take me some time! Lol, I’m sure some of you can understand especially if you are primarily moms of boys!

Anyways this cake is moist and flavorful and well colorful I would say! We use Wilton gel food coloring to achieve these bright vibrant colors. I’ve always been a fan of them, because a little goes a LONG way with those colors! We used a mix of pink, blue and yellow. Around the bottom is melted chocolate which is the yellow part. Now if you don’t want the melted chocolate you can reserve some more of the frosting and use the yellow on that, but I liked the contrast that the chocolate gave the cake.

This stores really well and literally we didn’t have a piece left in the house! I ALWAYS make my kids cakes every birthday, it’s something I got into many years back and I’ve continued the journey making any and all cake that they ask for. This year my son wanted a YouTube cake. Unfortunately that didn’t make it to the blog, not because it wasn’t fun, it just wasn’t the way I liked it to turn out.

It was really fun actually, it was a checkerboard cake and I had never made one of those before so I had an interesting time doing that. Then math kinda came into play with angles when I was trying to create the logo and yeah, it was a long time in the making. I have also made this pretty pink and purple cake, hello kitty cupcakes, princess cupcake cake, baseball cupcake cake, Minecraft cake, emoji cake, etc. The list is long you guys, so long.

Ingredients
  • 1 pkg white cake mix
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 tsp salt
  • 1 cup sour cream room temperature
  • 1 cup water
  • 4 egg whites
  • 1 tsp vanilla
  • 1 tsp almond extract
Frosting:
  • 2 cup butter softened
  • 4 tsp vanilla
  • 2 tsp almond extract
  • 8-10 cups powdered sugar
  • 4 Tbs milk if needed
  • 1/2 block white candiquick melting chocolate
  • Shopkins sprinkles found on amazon or at Walmart
  • Pink gel food coloring
  • Blue gel food coloring
  • Yellow gel food coloring
Instructions
  1. Preheat oven to 325.
  2. Prepare 2 8" round pans with cooking spray and parchment paper.
  3. Whisk together your cake mix, flour, sugar and salt until combined.
  4. Add your remaining ingredients and with a hand mixer blend until all dry ingredients are combined.
  5. Divide into your prepared pans.
  6. Bake for about 30 minutes or until lightly golden and toothpick comes out clean.
  7. To make your frosting, beat your butter until smooth.
  8. Add in your extracts and continue to beat.
  9. Add in your powdered sugar 1 cup at a time until you reach desired consistency, adding milk as needed.
  10. Separate about 1 - 1 1/2 cup of your frosting out in separate bowl.
  11. Add in your pink food coloring to the bowl with the more frosting and beat until desired color is reached.
  12. Mix in your blue food coloring into the smaller bowl and whisk or stir until combined and desired color is reached.
  13. To assemble your cake add 1 layer of your cake to cake stand and spread about 1 - 1 1/2 cup pink frosting and smooth to sides.
  14. Top with other cake layer and frost cake fully.
  15. Add your blue food frosting to piping bag fitted with an open star tip and pipe out swirls on top of cake.
  16. Sprinkle cake with shopkins sprinkles if desired.
  17. Melt your candiquick until smooth and add in a little gel food coloring at a time, it tries to seize if too much is added at once.
  18. Keep adding small amounts until desired color is reached.
  19. Add to piping bag and cut a small hole in tip and swirl up and down bottom of cake sprinkling with more sprinkles immediately.
  20. If you'd like to omit the Candiquick and use frosting instead just reserve a little more frosting from batch and dye with yellow food coloring.
  21. Refrigerate until serving.
