Sweet, tangy and delicious this BBQ Pork Sweet Potato Hash is a family favorite that is quick, easy and a breeze to whip up for a weeknight meal!
So I’ve completely fallen head over heels for sweet potatoes lately. Do you know how long it actually took me in my life to try a sweet potato? Yeah like 20+ years. I mean those of you who still aren’t sold on the concept that is known as a sweet….potato, you are surely missing out, big time. No joke.
I’m a huge sweet potato fry person. I mean I love love love them. No they aren’t as crispy as your normal fries, but the flavor!! Oh the flavor. I love the sweet aspect behind my starch! And when you get the right seasonings on those bad boys they just melt into your mouth with those beautiful blend of spices….yum.
Anyways, enough of my overwhelming love for the things, how about I tell you another overwhelming love…BBQ Pork Sweet Potato Hash. Now I consider hash to be a breakfast food, but I like to eat my breakfast foods at dinnertime, so this is pretty much Brinner to me. But can be plain old dinner if you want…I mean who really defines what is for what meal right?
This is such a fun and easy weeknight dinner and the kids love it, well mine do at least. I am lucky to have some sweet potato loving kiddos thats for sure. But what really sets this apart is the use of BBQ pulled pork! Yes, now you have a use for your leftover pull pork…because sometimes you know…you may have some leftovers, I’m not saying often, but there is a chance it may happen at some point.
Anyways, what you do with this delicious dish is sauté up your sweet potatoes with some onions and salt and pepper until nice and tender then you add your BBQ pork and mix until combined. You then make yourself some wells in the potato mixture and crack a few eggs and reduce the heat and cover and cook until the eggs are just done but still gooey on the inside.
That yolk over everything is just heaven! Top it with some cilantro and diced red onion and you have yourself a fun, breakfast, lunch or dinner!
- 2 large sweet potatoes diced
- 1 red onion diced
- Salt and pepper
- 2 cups pulled pork
- 1 1/2 cup BBQ sauce more or less depending of preference
- 4 eggs
- Cilantro optional
n skillet sautéed your potatoes,onions salt and pepper until tender.
In bowl mix together your pork and bbq sauce and add into your potato mixture and heat through.
Make 4 wells in your potato and crack an egg into each well.
Reduce heat to low and cover and simmer until white of eggs are done but yolks are still gooey.
Sprinkle with cilantro and extra red onion if desired.
