Not only are they quick and easy, having 4 kids they are just so much easier than making individual sized sandwiches for everyone. I mean any short cut I can get with my kids without having to sacrifice on taste is a win in my book, and that happens a lot with the majority of the food I cook!

Unlike the original tomato based sloppy joes, these bad boys have chicken gumbo soup in the. I know what you’re thinking…chicken gumbo soup?!?! This chick must be off her rocker. I assure you I am not.

This is something that I grew up with eating. Even know I adore original sloppy joes, I feel that nothing compares to the comfort that these have to offer. Literally minimal ingredients are used to create these. They whip up in under 30 minutes and you will have your whole family filled and satisfied and most likely no leftovers!! WIN!

These can be easily doctored up to feet your food profile too! We usually just dice up some onions to add in, but peppers are another great idea to add some more depth of flavor and color to your dinner. My kids aren’t too pepper obsessed like I am, so a lot of the time I have to leave them out. One day they will learn that pepper are actually amazing and they won’t be able to get enough…here’s to hoping.

Sometimes I try and sneak the in and tell the kids that it is just seasoning…that actually worked for the longest time, but then someone realized when mom said “seasoning” it really meant something that they normally didn’t like. Didn’t matter if they never tasted it or if it never bothered them to eat it before. Once they knew the dreaded ingredient was actually included it was like a zipper was put on their mouths and they were stuck shut!

Ingredients
  1. 1 lb ground beef
  2. 1 small onion, diced
  3. 1 can chicken gumbo soup
  4. 2/3 cup ketchup
  5. 1 Tbs mustard
  6. 1 1/2 cup shredded Colby Jack cheese
  7. 12 count slider buns
Glaze
  1. 1/4 cup butter, melted
  2. 1 Tbs brown sugar
  3. 2 tsp Dijon mustard
  4. Dash onion powder
  5. Dash Worcestershire sauce
  6. Parmesan cheese
Instructions
  1. Preheat oven to 350.
  2. In skillet brown your ground beef and onion until no longer pink and onions are tender, drain.
  3. Mix in your soup, ketchup and mustard
  4. Place your slider buns in a 2qt baking dish (about 7"x11") and top with your ground beef mixture.
  5. Sprinkle with cheese and top with bun tops.
  6. In small bowl mix together your glaze ingredients and brush over tops of sliders.
  7. Sprinkle with parmesan cheese.
  8. Bake for about 15-20 minutes or until cheese is melted.
