These fun Caramel Apple Cider Waffle Puffs are filled with a caramel mousse wrapped with a waffle puff and topped with sautéed apples and apple cider syrup.
First and foremost I want to wish everyone a happy and safe Halloween. This is one of my most favorite times of year. I absolutely love going trick-or-treating with my kids! I love getting dressed up and playing alongside them, and I usually do it every year! I think the kids really like it too!
BUT another thing I love is these absolutely fun Caramel Apple Cider Waffle Puffs! I’m sure you’ve seen the trend of these delicious Waffle Puffs around Instagram or Facebook lately. Apparently they are a huge street food over in Hong Kong! I’ve seen them filled with all sorts of things, mainly ice cream.
Well today my friends I’m giving you a fun Fall breakfast OR dessert version (whatever you choose it to be)! These Caramel Apple Cider Waffle Puffs are stuffed with caramel mousse and topped with sautéed apples and apple cider syrup. How delicious does that sound?!?!
This Waffle Puff Pan from Nordic Ware is seriously awesome! The kids and I cannot get enough of it making all sorts of fun flavors! I knew when I see this pan, I HAD TO HAVE IT! It is honestly such a fun twist on a traditional waffle. For little hands like my daughter, you can pull apart the little puffs and dunk them into syrup. Or like my boys, drizzle with chocolate, marshmallows or whatever your heart desires.
But for this girl, I knew I had to do something fun and special with it. So these Caramel Apple Cider Waffle Puffs were born. The waffle puffs themselves whip up in just minutes. Nordic Ware provides you with a basic recipe that you pour into your pan just like an original waffle cook on one side and manually flip and cook on the other and that is it! They come out perfectly puffed up and golden!
Since apples are really popular in our house and I’m pretty much addicted to all things caramel I absolutely knew what flavors I was going to do. Adding the apple cider syrup was just the icing on the cake as they would say. It really brings the flavors together well.
This recipe really reminds me of a crepe more than anything. Well a crepe waffle hybrid really. You have the fun puffiness from the waffle, but you have the flexibility of a crepe. And you can stuff them with anything….so it’s a win win situation in my book! I mean who doesn’t want something that looks like dessert for breakfast anyways?

- 1 (8oz) package cream cheese, softened
- 1/2 stick butter, softened
- 1 cup powdered sugar
- 1 tsp vanilla
- 1/2 cup caramel sauce (like ice cream topping)
- 1 cup heavy whipping cream
- 2 large apples, peeled, cored and sliced thin
- 5 Tbs butter
- 1 tsp cinnamon
- 1 cup brown sugar
- 2 Tbs cornstarch
- 1 tsp cinnamon
- 1/2 tsp all-spice
- 2 cups apple cider
- 1 tsp lemon juice
- 1/4 cup butter
- 4 egg yolks
- 3/4 cup milk
- 2 tsp vanilla
- 1/3 cup butter, melted
- 3/4 cup sugar
- 1 cup plus 2 Tbs flour
- 1 1/2 tsp baking powder
- 1/8 tsp nutmeg
- 1/8 tsp salt
- 6 egg whites, beaten to stiff peaks
- Vegetable oil for cooking
- To make you caramel mousse, in large bowl beat your cream cheese and butter until smooth.
- Mix in your powdered sugar and vanilla and continue to mix until combined then add in caramel sauce and blend.
- In another bowl, beat your heavy whipping cream until stiff peaks form then fold into your cream cheese mixture and place in refrigerator.
- Meanwhile to saute your apples in large pan melt your butter on medium heat and add your apples, cover and simmer for about 8-10 minute or until apples are tender stirring around every once and awhile, stir in your cinnamon and set aside.
- To make your waffle puffs in large medium bowl whisk together the egg yolks, milk, vanilla, butter and sugar until combined, set aside.
- In separate bowl combine your flour, baking powder, nutmeg and salt then whisk in your egg yolk mixture until it is smooth and combined.
- Gently fold in your egg whites 1/3 at a time until blended.
- Lightly brush or spray your waffle puff pan with vegetable oil.
- Separate you waffle puff pans and place and preheat each side on medium heat on stove.
- Pour about 3/4 cups of your waffle mixture into the center of one of your pans and top with other half and flip pan over and cook for about 2 minutes, flip over again and cook for another 2 minutes or until golden brown.
- Open pan and flip waffle onto plate, repeat with remaining batter.
- Meanwhile to make your apple cider syrup, in medium sauce whisk together your brown sugar, cornstarch, cinnamon, all-spice and salt. Stir in your apple cider and lemon juice and heat on medium-high heat until it comes to a gentle boil, continuously stirring.
- Allow to boil until thickened to your desired consistency, remove from stove and stir in your butter and let cool slightly.
- To each waffle puff add desired amount of caramel mousse down the center, fold sides of puff over the mousse.
- Layer apple slices on top of waffle and drizzle with apple cider syrup.
