So Fall is definetly in the air here in Minnesota. Which does feel nice, but I’m going to miss our nice warm Summer days here. I’m a Minnesota girl at heart, but if I could be in 80 degree weather all year long I’d gladly jump at that opportunity.

So since Fall flavors like Pumpkin and Apple have been popping up all over and I’ve already posted my first Pumpkin recipe of the year with this delicious Spice Cake with Cinnamon Cream Cheese and Pumpkin Buttercream. I figured it was about time I’d whip out an apple recipe just to make things even.

Say hello to this utterly addicting Caramel Apple Pie Overnight Oats. If you like Apple Pie like me then you’ll love these. There are so many ways to eat Apple Pie these days. I like mine with a little bit of caramel. Or let’s just be straight here, I like ALL my desserts with a little bit of caramel…is that bad? No? Didn’t think so.

Well regardless of all the many ways of eating Apple Pie I decided to turn them into breakfast. Or dessert. It really doesn’t bother me which way you decide to eat these because I’ve already eaten them for both. And let me tell you…it was amazing both ways!! For real, but I can’t deny that I haven’t had myself a little bit of dessert for breakfast a time or two…or twelve. But who’s judging anyways.

Ok, this recipe is SUPER simple. Like easy as pie! Ha, get it? If you’ve never made overnight oats before then you’ll be surprised at how little ingredients are actually needed. To make the base you start with some Old Fashioned Rolled Oats. Then you add milk. Yup, that’s it.

But why stop there? Obviously you could just eat it that way with a little brown sugar added in the morning. But how boring would that be? I like to add a little flavor to the mix. You can pretty much whip up any kind of oat’s that you’d like with that simple base, but trust me you’ll want to try Caramel Apple Pie Overnight Oats.

So, since sometimes I like to be lazy and take the easy way out, that’s what I did here. And it was 11:00 at night when I got a wild hare up my butt and decided to make these so I used a delicious can of Apple Pie Filling. But by all means, if you want to take the time to make your own Apple Pie Filling be my guest, it wouldn’t hurt any!

And if you’re even thinking about skimping on the caramel, I urge you…don’t do it. I know, caramel can be unhealthy and all that jazz, but it so makes it worth it! Caramel and oats just mesh well together ya know? But when you add apples to the mix, then you’ve got yourself heaven in a jar.

It’s really up to a person’s preference as if you’d like to eat these warm or cold. I ate mine cold. But you could easily pop this in the microwave and give it a quick nuke to heat it up a bit if you’d like. Also…as pretty as serving these in mason jars are, they are not necessary. A plain old bowl will do just fine. I actually made these in a big bowl and let sit overnight and layered them in the jars upon serving.

Creamy oats are blended with apple pie filling, spices and caramel to make a delectable breakfast or dessert.

Ingredients
  1. 2 cups Old Fashioned Rolled Oats
  2. 2 cups milk
  3. 1 (21 oz) can Apple Pie Filling
  4. 1-2 tsp cinnamon
  5. 1/4 tsp nutmeg
  6. Caramel sauce
Instructions
  1. In large bowl mix together your oats and milk.
  2. Open a can of Apple Pie Filling and cut into smaller chunks using a knife, add to oats and milk.
  3. Stir in your spices.
  4. Cover and refrigerate at least 6 hours if not overnight.
  5. If desired spoon into mason jars layering with caramel sauce, otherwise spoon oats into bowl and drizzle with your caramel sauce
  6. Sprinkle with additional cinnamon if desired.
