So it snowed last night. It was our first storm of year here in Minnesota. Like always, we all forget how to drive in the winter and essentially school is 2 hours late. Kids are freaking ecstatic. Too bad this lady was so messed up and forgot how 2 hour late worked and I got them up ad ready a whole 1.5 hours early….sorry kiddos. Usually I’m not a snow person, but this has put me in the mood for Christmas and the mood to continue on with our Salted Caramel Week!!
If you remember me posting my Banana Mug Cake then you’ll know how much I love these single serving desserts. What I love even more is the holiday flavor of this Salted Caramel Ginger Poke Mug Cake…I know it’s a long title but I honestly couldn’t think up anything else to all this beauty. It is exactly what it says it is. A ginger(bread) cake cooked in a mug, poked and drizzled with salted caramel. Um can you say yumminess?
I know that we are all busy around this time of year with the baking, shopping and cooking so mug cakes are a great alternative to a big fancy pan full. With all the sweets around it serves as just a single serving size where you don’t have to use up all of your ingredients in your pantry to make the one flavor you’re craving. Which I happen to always crave salted caramel.
This literally takes 1 minute in the microwave, a little poking, a little drizzling and you’re done. It is husband and kid approved. I essentially made this to bring up to my mom who was in the hospital over Thanksgiving but my 2-year-old daughter got into it and ate it so I whipped up 2 more real quick and headed out. These are just as good to serve at get togethers as any other larger dessert, and everyone will love that they get their own bowl/mug/ramekins full!
- 4 Tbs all-purpose flour
- 1/4 tsp baking powder
- 1 Tbs brown sugar
- 3 Tbs milk
- 1/2 tsp vegetable oil
- 1/4 tsp ginger
- 14 tsp cinnamon
- 1/2 Tbs molasses
- Pinch of salt
- Caramel Sauce
- Whip Cream
- Sea Salt
- Combine all ingredients in a mug or ramekin.
- Whisk until combined.
- Microwave on high for 1 minute,
- Remove from microwave and poke holes in cake with fork,
- Drizzle with caramel sauce and sprinkle with salt.
- Top with whip cream and drizzle with more caramel and salt.
