Butternut Squash Fries

Butternut Squash Fries

How can I not be adjusted to the time change yet? This is really taking its toll on me! I literally went to bed at 7 the other night just because it was dark and my internal clock was still being toyed with and……I was bored. But I actually sat in bed for like 3 hours because I just couldn’t justify going to bed that early. So I started brainstorming on Thanksgiving dishes!

I like to think outside the box for Thanksgiving dishes! It just so happens that our neighbor brought me over an array of squash and I knew I had to make something with them! Butternut Squash Fries needed to be made. I love making homemade french fries from potatoes, sweet potatoes, zucchini…pretty much anything, But Butternut Squash Fries are my all time fave!

These are tossed in olive oil and sea salt and baked then topped with basil and parmesan cheese. Cheese makes everything better, and it give these just the extra taste they need! So do you wan to think outside the box this Thanksgiving but still make something that everyone loves try these!

  1. I haven’t adjusted to the shorter days yet either! Dark and cold both make me want to hibernate! These look delicious… perhaps I could take a plate of them with me when I go curl up under my blankets.

  2. I’m with you on making fries out of all kinds of different things! We also like to experiment at Thanksgiving, too… it’s fun to try new dishes or versions of old favorites! These butternut squash fries sound amazing – I’ll eat them all winter long!

  3. Ooooh, I’ll have to try these! I’m always looking for different ‘fry’ options, but I’ve never tried butternut squash before, they must be so delicious! Time changes are the worst. THE WORST. And I don’t even have anyone in my house that takes naps (well, scheduled ones anyway 😉 I don’t know how you moms do it!

  4. I never would have thought to make these – frankly, they sound a little strange to me! But your recipe, photos and glowing description have turned me around! Now I can’t get the idea out of my head!

Thanks for bringing this to Throwback Thursday!

  5. These butternut squash fries look great, Alli. I wouldn’t have thought of this either, but it sounds like a creative recipe that would be tasty. Thanks for sharing at Snickerdoodle Sunday. Pinned and Tweeted.

  6. Oh em gee… these look amazing!! Can I come over next time you make them?? ;P

Is cutting the squash tricky? I’ve gotten better about it, but I’m still a little intimidated by squash in all its forms… butternut is one I haven’t done with much so far….

Thanks for sharing at Friday Frivolity!
