Football season is finally underway! Whoop! Now my husband and I aren’t big sports people, but my 10-year-old is! He is the student manager for the varsity football team at the local school and he loves it. He get’s to be right up front in the action and get’s to participate in the practices and interact with the players on a daily basis. Besides doing that he is a big ESPN fan and watches every sport imaginable. So needless to say if I care of not, I get score updates on pretty much any game that is currently on.
Now even know I’m not a sports fan, I do love love love the food! Any game day snacks or tailgating food, I’ll eat it! Appetizers are my kryptonite! I love making meals consisting of just them! Meatballs and weenies are my specialty! But I’m also a huge dip girl! Usually if I have company over you’ll at least see 2 dips displayed on my food table. What can I say, I can never decide on just one thing. Am I alone in that? I’ll literally search and search and search for what I want to make and I’ll end up making 3 different things because I just want the all and I refuse to choose, because what if I made the wrong decision?
Anyways, look at this Bacon Beer Cheese Dip, isn’t it pretty in all it’s cheesy goodness? Cheese is what sustains my life. I’ll put cheese on pretty much anything if I could, kind of like ranch, I’ll put that on everything too. But when I get a cheesy dip like this, I’m in heaven. Pour me a whole bowl and give me some bread or pretzels and I’m good. No need for anything else, I’ll fill up with this alone! So next time you have a get together or just a night in alone, by yourself and your craving something out of the ordinary, give this dip a try!
- 1/4 cup butter
- 1/4 cup flour
- 1/2 tsp salt
- 1-2 tsp spicy brown mustard
- 1/4 tsp pepper
- Dash Worcestershire sauce
- 1 cup milk
- 1/2 cup beer
- 2 cups shredded cheddar cheese
- 2/3 cup bacon bits or crumbled bacon pieces
- In saucepan, melt butter; stir in flour.
- Add, salt, mustard, pepper and Worcestershire sauce, stir to combine.
- Slowly add your milk, and beer.
- Bring to boil and cook for about 2 minutes until thickened.
- Reduce heat to low and add in cheese and stir until smooth and cheese is melted.
- Fold in bacon bits.
- Serve with chips, pretzels or slices of bread.
