White Chocolate Straweberry Shortcake Stacks

 

Good morning everyone. It is seriously unseasonably cold here in Minnesota the last few days. This past weekend we had our 90 degree hot and humid normal which I admittedly love. Now its only the high of like 63, what gives? This is too cold for my liking. I’m speaking more from always being absolutely freezing and not circulating the way it is. I suppose it is something that I will just have to adjust. Boo.

I can admit to loving the rain though. I know what you guys are thinking, this girl is off her rocker. I do though, I love those cozy rainy days where I have an excuse to be able to clean, watch movies, bake, be lazy! We all have to admit that the rainy days are nice. Instead of being forced or feel bad if we don’t go out and enjoy the nice weather we are able to just slow down and relax.

So yesterday since it was colder, the kids and I were able to play around with some food. I had a pound cake that I got on clearance at Walmart, gotta love the bakery reduced stand! And some strawberries that were just staring at me with their imaginary puppy eyes just begging to be used. We decided to make some strawberry shortcakes on a stick. Now this recipe doesn’t really come with any set measurements it makes it really easy to make as many that suit your needs. In my case I only needed to make 3 since only 3 of my kids were with me! The way my daughter was stealing strawberries from me mid layer though, I probably wouldn’t have been able to make much more than that anyways.

Ingredients:

1 pkg strawberries
1 pre-made/homemade pound cake
1/2 cup white chocolate chips
Skewers

Directions:

Cut your desired amount of strawberries in half, set aside. Cut your desired amount of pound cake into about 1″ squares, you’ll want to have the same number of cake squares as you do strawberry slices. Alternate the cake and strawberries onto skewer, set aside. In small bowl, microwave your white chocolate chips in 30 second intervals until melted. Place in piping bag or plastic bag with a small hole cut and pipe over the skewers. Serve and enjoy!
