I have noticed after blogging awhile that I do my best writing in the mornings. I used to try to get everything accomplished at night but that didn’t work to well. I had supper to make, kids to feed, kids to put to bed. Then it just got too late and I knew I still had to do so much and all I wanted to do was rush through a blog post and get it scheduled to post the next day. Seriously not the best thing that I could have done.
I love the nice quiet mornings when no one but you is awake. Great time for a person to have to themselves and actually get some stuff accomplished. I can seriously get more done before 9:00AM than my husband can get accomplished all day. Kids up, kids fed, laundry, dishes, cleaning, kids dressed, bathed, off to school, blog post written, posted, etc. Wow, it doesn’t seem like a lot but it sometimes is. We have to learn to give ourselves a little more credit.
anyways, enough with that. How is everyone’s week going so far? Mine is better now that I have these brownies in my life. Seriously, brownies are my go to happy food. I will always love love love brownies. BUT I am quite particular on my brownie selection. I know, miss picky here. Obviously if there are you know random brownies lying around I’ll oblige and eat them, but my absolute favorite brownies are the thick fudge texture ones. Add a little frosting and I have myself a pan of heaven!
1 cup(2 sticks) salted butter
1 (16 oz) bag semi-sweet chocolate chips
3 cups granulated sugar
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking powder
1 1/2 tsp salt
2 tsp vanilla
Salted Caramel Frosting:
1 (16 oz) container vanilla frosting
1/2 cup caramel bits, melted
Pre-heat oven to 350. In a double boiler or in my case over a medium pan filled with a few inches of water covered with a pyrex bowl, melt together your chocolate chips and butter. While those are melting, in another bowl whisk together your flour, cocoa powder, baking powder and salt, set aside. Once chocolate is melted, remove from heat and add your sugar slowly and stir until combined. Next add your eggs, one by one stiring after each addition. Finally stir in your vanilla.
Fold your wet mixture into the dry until combined. Pour into a greased 9″x13″ pan and bake for 50-60 minutes or until a toothpick comes out clean. Let cook. Meanwhile, mix together your frosting and melted caramel bits. This may make your frosting a little runny, that’s ok. Place frosting into fridge for a little bit to harden up,
Once brownies are fully cooled, pour your frosting over top and spread. Sprinkle with desired amount of sea salt and enjoy!
